Vegetables and fruits reduce cholesterol level in blood. It averts the fat deposits in the arteries. US researchers at the Wake Forest University School of Medicine have conducted experimentation on the advantages of vegetables and fruits in mice. They concluded that a diet rich in green and yellow vegetables restrains solidifying of the arteries and decreases the risk of heart disease.
During research, mice developed atherosclerosis in the arteries that blocks blood flow. Half of the mice were fed a diet with broccoli, green beans, corn, peas and carrots. Half were not given vegetable diets.
The cholesterol level in blood vessels of the mice was reported reduced than earlier after some sixteen weeks. The researchers also found that the mice fed with vegetables assembled thirty-eight per cent less fats deposits in the arteries.
