Are low fat dairy products effective as food for healthy skin and body?

Due to excessive weight gain, the doctor advised me to take care of my diet, and advised of including low fat dairy products instead of excessive butter and oil in food. I understand how important it is for my health, however, I want to know from some health and fitness expert, whether I can improve my skin’s texture by eating low fat dairy products. I am a vegetarian and since I don’t eat fish and other non vegetarian food, I need to know how can I keep my skin and hair healthy, without eating non fatty things! I would be thankful to you guys, if you could assist me on it appropriately.
