Homemade condiment recipes

  • Keep-on-hand sweet ketchup: it is easy to make out the difference between stale and fresh tomatoes and the same is true for homemade ketchup and one purchased from the market. The following is the recipe for spicy tomato ketchup.

Ingredients for the same:

2 quarts homemade tomato sauce

I sweet green pepper, chopped

2 sweet red peppers, also finely chopped

2 medium onions

2 cups of honey or sugar

3 tablespoons salt
3 cups cider vinegar
Tie in a cheesecloth bag:
1-1/2 teaspoons whole allspice
1-1/2 teaspoons whole cloves
1 stick cinnamon, broken in several pieces

You need to cook all ingredients except vinegar on simmer flame in a big pot until it becomes thick which will take almost 2 to 4 hours. Then add the vinegar and cook for another fifteen minutes.

  • Homemade mayo: Ingredients for homemade mayo

1 fresh egg yolk from a pastured hen
            Pinch of kosher salt
             3/4 cup olive oil
3 tsp lemon juice and/or vinegar
1/4 tsp Dijon mustard
Fresh herbs, chopped garlic, hot sauce and/or white pepper, to taste (optional)

 When you have all the things you need to whip the salt along with a tablespoon  of oil in the egg yolk. When it begins to stiffen then add the rest of ingredients except for the oil. You can add the oil as you whisk the ingredients.

 

  • Delicious easy to make mustard:

Ingredients:

2 1/8 cups white mustard seeds, ground
2 tbsp mustard powder
1/2 cup water
2/3 cup white wine vinegar
1/4 cup honey
1/4 cup sugar
2 tsp salt
2 tsp ground coriander seeds
Grated zest (rind) of 1 lime
2 1/4 tbsp lime juice

The first step would be to combine the mustard powder and the seed along with some water for about three hours. Then put all in the mixer grinder except the lime juice. Only add the juice to smoothen the mixture.

  • Homemade sour cream:

Ingredients:

1 cup heavy cream
¼ cup sour cream

Mix together the sour cream with the heavy cream in a jar with a lid and shake it a bit and leave it at room temperature for about a day.
