Cheesy spinach bake recipe

Difficulty level: Easy (anyone can do it, even first timers)

Time required: 55 minutes maximum ( preparation and cooking time)

Resources required

Cherry tomatoes: 4 clusters

Mustard powder: 1 tbsp

Eggs: 6 (large)

Bread: 3 big slices

Baby spinach: 1 225 ml bag

Milk: 425 ml

Cheddar cheese: 200 g (matured)

Salt: 1 tbsp

Process

  1. Take a 2 liter shallow dish and grease it with butter.
  2. Preheat the oven 190° C with gas mask 5 and fan 170°C.
  3. Take the spinach leaves in a strainer or in a perforated vessel. Pour hot water over it and allow it to sit for a few minutes. It will wilt and become tender.
  4. To make the cheese base we will need a food processor. To the food processor, add the 6 whole eggs, English mustard, milk and salt. Blend well.
  5. Add the bread (do not remove the crust) and blend again till you get a smooth mixture.
  6. Transfer the processed mixture in to a bowl.
  7. Grate the cheese and keep aside one-fourth of it and add the rest to bowl with the mix.
  8. Add the spinach after removing the excess water from it. Mix well.
  9. Transfer the mixture to the greased bowl and top it with the fresh cherry tomatoes and rest of the matured cheddar cheese.
  10. Bake it in the preheated oven for 30 minutes or until it becomes golden brown. It will rise a bit as it is getting baked. Remove from oven and allow it to cool for at least 15 minutes before serving.

Tips

  1. English mustard is preferred.
  2. Spinach can be microwaved instead of just pouring in hot water over it.
  3. Use tomatoes on the vine.
  4. Use a little pepper if you like.

Things to watch out for

1. Oven has to be operated only under adult supervision. Always use mittens while handling.

2. Always preheat the oven before keeping the mixture. If the oven cavity is not hot enough, then the dish will not rise properly.

3. Do not serve immediately. It has to be rested for sometime for the flavors to marinate and settle before serving.

4. Do not over mix in the food processor.
