Coconut belongs to the Palm family Arecaceae and is grown around the world in lowland, tropical and subtropical habitats. However, it thrives well on coastlines.

The origin of this plant is shrouded in darkness, as few claim it is native to south Asia, while others declare its origin is in northwestern South America. Whereas, fossil records from New Zealand contradict both indicating that small, coconut-like plants grew there as long as 15 million years ago.

Coconut offers a variety of health benefits, apart from adding to the cuisine. The white, fleshy part of the seed is edible and used fresh or dried in cooking. Coconut oil is also rich in vitamins and antioxidants. It is rich in lauric acid, which is known for being anti-viral, antibacterial and anti-fungal. It is also used by thyroid sufferers to increase body metabolism, and to lose weight. Virgin coconut oil is used for making natural soaps and other health products. It is said to be one of the healthiest things to be applied on skin because it reduces bacterial and fungal infections. It is stated to improve digestion by helping nutrient absorption and regulate blood sugar levels. Someone using coconut frequently would not gain in weight. Coconut water can be used as an intravenous fluid. The water is also used in isotonic sports drinks.

Because of high level of saturated fat contained in coconut oil, it was considered a health hazard in the U.S. initially, but studies have shown that not all saturated fats are alike and that the fatty acids in virgin coconut oil in no way raise serum cholesterol or contribute to heart disease, in fact are very healthy. However, hydrogenated coconut oil, which has been altered from its original form, can be considered dangerous for health.

The medical community world over is now recognizing coconut oil as a functional food, which is a powerful tool against immune diseases.
