What is a gluten-free/casein-free diet?

GFCF = gluten-free/casein-free. It is one of many alternative treatments for children with autism. It is a strict diet, which eliminates all foods containing gluten and casein. Gluten is more than just wheat, it’s grains like wheat, barley, oats and rye. Casein is the protein found in dairy, including cow’s milk, sheep, goat and human breast milk.

Benefits

Our theory says that children with autism are highly sensitive or even have an allergy to foods containing gluten or casein. According to this theory, foods containing casein and gluten exacerbate the autistic symptoms because children with autism process gluten and casein differently than other people. Reducing symptoms and improving social behaviours and speech are some of the benefits that GFCF diet should give.

But, all this comes with a risk. Eliminating all sources of gluten and casein is very difficult and children may prove to be very difficult.

Which foods contain gluten?

Gluten is a protein contained in seeds of some grains like rye, wheat and barley.
It is a bit challenging to avoid gluten, but still there are natural
food stores which have a special area for gluten-free food. When following a GFCF diet, almost all bread and grain products are prohibited. So, it’s essential to give the person ample fiber, vitamins and minerals. Also, supplementation can support make up for the lack of these nutrients.

Which foods contain casein?

Casein is contained in dairy products and other foods which contain lactose or dairy. Calcium and vitamin D are very important for the body, but GFCF diet restricts products that give the body these vitamins so you’ll have to make sure that the dieter gets them from other sources. Also it’s very important to read labels carefully because many soy products and imitation dairy products could contain casein.
