How to prepare a healthy casserole recipe?

My son is 9 years old and he is a complete foodie like his dad! He had some breakfast casserole made up of bread at his friend’s home yesterday. Now, he wants casserole recipe to be prepared for him. I am concerned about his health and therefore whatever the casserole, I want to prepare it healthy and nutritious for my son. Could someone tell me some easy casserole recipes, and in what all ways can I make them as healthy as possible?
