Corn and pesto pizzas are small and scrumptious pizzas made with pesto sauce. Traditional Italian pizzas consist of tomatoes and grated mozzarella cheese, the two ingredients that were used from the very start. It is common knowledge that pizzas originated in Italy. But, the pizza underwent a lot of changes and the usual tomato sauce was replaced by various other sauces. Pesto sauce is one of them. However, the tomato sauce still remains the hot favorite when it come to pizzas. Pesto sauces originated in Genoa in the Liguria region of norther Italy. It comes from the word pesta, which literally means to pound or to crush. A pesto is made using a wooden or a marble mortar and pestle wherein the ingredients are ground and not pound. Original ingredients of a pesto sauce include garlic, pine nuts, basil leaves, Parmigiano-Reggiano e Pecorino and salt. Once these ingredients are ground in a mortar and pestle, it can be preserved for days by covering it with olive oil. 10 mini whole-wheat pizza base
Olive oil
For the pesto
1 tablespoon basil leaves
2 walnuts, halved
2 chopped cloves garlic
1 teaspoon olive oil
salt
For the corn pesto sauce
Half cup boiled corn kernels
2 teaspoons corn flour mixed in some water
Half teaspoon chopped garlic
Pesto ( mentioned above)
For baking
Mozzarella cheese ( as per your taste)
Method
First, prepare the pesto which will then be added in to prepare the final sauce. For the pesto, put basil leaves, walnuts, garlic in a mortar and pestle along with olive oil and salt. Remember, this is the only time you add salt, so add it as per your taste at this stage itself. Ground the entire mixture until you have a thick paste. Keep it aside.
Next, prepare the main sauce, the corn and pesto sauce. Put the pesto sauce in a pan and add the corn kernels, corn flour and garlic. Cook until the mixture dries out completely. Keep aside and let this mixture cool.
Now, place the whole-wheat pizza bases on a baking tray. Don’t forget to grease the baking tray with olive oil or butter. Put the corn and pesto sauce on these mini pizza bases, spreading evenly. Sprinkle with mozzarella cheese ( the amount of cheese is according to your liking). Pre heat the oven at 200 degree Celsius. Put the baking tray in for about 4-5 minutes or until the cheese melts. Remember, the sauce is already cooked, so you don’t need to worry about it at this stage. Simply let the cheese melt. Your mini corn and pesto pizzas are ready. Serve hot.
