Ingredients
1. Whole unsalted almonds with their skin about ½ a cup
2. Old fashioned oats say about 2 tbps
3. Unsalted butter say about 6 tbps or ¾ sticks
4. Icing sugar say about 6 tbps
5. Use packed light brown sugar say about 2 tbps
6. Honey say about 1½ tsp
7. All-purpose flour say about 1 tbp
8. Kosher salt about ½ tsp
9. Melted bittersweet chocolate about 4 ounces

Process
1. Preheat oven and keep it ready
Start with preheating your oven to 350 degrees F. Before you start to heat the oven, arrange lower and upper racks of the oven. Lay two baking sheets with parchment paper.
2. Beat the almond and oats
Beat almonds and oats in a food processor till it is roughly ground. Set the mixture aside.
3. In a saucepan
Place a medium saucepan on the stove. The stove should be on medium heat. Add butter to the saucepan and melt it. Now you need to add sugar and honey to the melted butter in the sauce pan. The butter, sugar and honey needs to be whisked till the sugar melts and blends properly. Keep the blended mixture on the flame for about 2 minutes. Now take the saucepan off the flame. To the blended mixture in the saucepan, add the all-purpose flour, the kept aside nut mixture and salt. Stir mix the ingredients in the saucepan till all the ingredients are mixed well.
4. Place the batter on the baking sheets
For each cookie, use two spoon portion of batter. Place the batter on the baking sheet. Be careful while placing the batter as it needs to be at a distance of 2-½ inches. With the help of your finger tips, pat the batter to ¼ inch rounds. Make smooth circles by patting the bulging out edges. Rotating sheets need to be baked after 6 minutes. Bake the cookies until they are dark golden brown. The batter of the cookies will flatten into a thin crisp layer. It will take about 10 to 12 minutes for the baking procedure to complete. The cookies then need to be slid over the parchment paper. The parchment paper needs to be placed on a wired rack. Allow the cookies to cool.
5. Coat with chocolate
To coat your cookies, you need melted chocolate. Now once these cookies have cooled they are ready to be coated. With the help of a pastry brush, coat half the cookie with melted chocolate. It will take about 2 hours for the chocolate to set. You can store these cookies in an airtight container. Just add wax paper between the cookies to store them.
