For a city kid like me, <strong>Honolulu&#8217;s<\/strong> <strong>Chinatown<\/strong> is familiar &#8220;mother street.&#8221; The grit, the small streets full of  \t\tvehicles, a multiplicity of languages, old buildings and a million  \t\tlittle family shops, all make me feel very much at home.  &#8220;Yo! I&#8217;m  \t\twalkin&#8217; here!&#8221;<\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\" src=\"https:\/\/tripatlas.com\/new\/images\/articles\/waikikistrollfreeman.jpg\" border=\"0\" alt=\"Morgan Freeman and I\" title=\"Morgan Freeman and I\" hspace=\"10\" vspace=\"2\" width=\"300\" height=\"200\" align=\"left\" \/>Loving a place, as I do America&#8217;s oldest  \t\tChinatown, means having favorite defunct restaurants\/buildings\/signs,  \t\tand forever-magical spots like King St. &amp; Smith where I bumped into <strong> Morgan<\/strong> <strong>Freeman<\/strong> one midnight as Chinese Opera music wafted  \t\tfrom an upper window<\/p>\n<p>Love affairs are not clear-eyed; there  \t\tis always mystery.  And especially in the case of Chinatown, for haole  \t\tole me, there has always been that certain veil. I might read about the  \t\told opium and gambling den days, know the former sights of plantation  \t\tera dime-a-dance palaces, might even say &#8220;Nihau&#8221; or &#8220;Gung Hee Fat Choy&#8221;  \t\tat my favorite Dim Sum place with total sincerity, but there is just no  \t\tway into the secret truth of the Chinatown Community without the  \t\tkindness of a trusted guide.  Such is 3rd generation  \t\tresident <strong>Anthony Chang.<\/strong><\/p>\n<p>Along with about a dozen other  \t\tlocals one recent Saturday morning, I was fortunate to join Mr. C&#8217;s  \t\tmonthly strolling tour through the neighborhood he knows so well.  And  \t\tvice versa! It was like being in the entourage of a celebrity.   \t\tEverywhere we went, neighborhood folks greeted our host with warm  \t\tsmiles, and this included in the back rooms of small noodle factories,  \t\tbutcher shops, and tiny restaurants gearing up for the day.<\/p>\n<p>Watching sheets of rice noodle being  \t\tmade from scratch we learned that the proprietors add the drippings of  \t\troasted meat (from the butcher next door) to some of the noodles to suit  \t\tChinese taste, but keep other batches meat-free for the Vietnamese who  \t\tprefer them that way.  You see, not only is Vietnam strongly Buddhist  \t\t(and therefore largely vegetarian) it is also the farthest from the  \t\tspices of India and deeper Asia.  Now I understand why Vietnamese food  \t\tis so fresh and clean to the palate!<\/p>\n<p>Ancient China had few trees, so  \t\tfolks cooked over grass flames: fast and hot.  This gave birth to the  \t\tstir-fry method, which quickly &#8220;bursts&#8221; and caramelizes the cells on the  \t\tsurface of your food, sealing flavorful juices inside where they wait to  \t\texplode on the tongue like a Shanghai soup dumpling.  Each village, if  \t\tlarge enough, had a central shop, which roasted the meat for everyone.   \t\tThis is why roasted ducks and pigs are displayed in the familiar fashion  \t\tone sees in Chinatowns throughout the world.<\/p>\n<p>Here&#8217;s a tip: it is the Chinese custom  \t\tto go food shopping early in the day.  So the very best shops are found  \t\ton the morning-shady side of the street!  If you see a similar shop  \t\tacross the street, it&#8217;s probably second best, though still worthy, and  \t\tyou might find shorter lines over there as well.  If you&#8217;re in a hurry,  \t\tyour guests will never know the difference. Shhhhh!<\/p><div class=\"3a64bb57635b757d04b12bcf0c14b9a3\" data-index=\"2\" style=\"float: none; margin:10px 0 10px 0; text-align:center;\">\n<script async src=\"https:\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script>\r\n<ins class=\"adsbygoogle\"\r\n     style=\"display:block; text-align:center;\"\r\n     data-ad-layout=\"in-article\"\r\n     data-ad-format=\"fluid\"\r\n     data-ad-client=\"ca-pub-9477973674766713\"\r\n     data-ad-slot=\"8885944693\"><\/ins>\r\n<script>\r\n     (adsbygoogle = window.adsbygoogle || []).push({});\r\n<\/script>\n<\/div>\n\n<p><img decoding=\"async\" src=\"https:\/\/tripatlas.com\/new\/images\/articles\/waikikistrolltree.jpg\" border=\"0\" alt=\"Trees in Foster Botanical Garden\" title=\"Trees in Foster Botanical Garden\" hspace=\"10\" vspace=\"2\" width=\"300\" height=\"225\" align=\"right\" \/> The ancient Hawaiian Village of \t\t<strong>Kou<\/strong> sat where the <strong>Foster Botanical Garden <\/strong>and the lovely \t\t<strong>Kwan Yin Temple <\/strong>stand today on the mauka side of Vineyard  \t\tBoulevard, which itself is named after the vineyards established there  \t\tby early Portuguese resident Juan Marin on land granted him by the  \t\tking.  [Marin was reportedly not as generous with his harvests, opting  \t\tto sell his provisions to the ships in the harbor rather than to share  \t\tthem with his neighbors.  This made quite an impression on them which  \t\tlives on today in the Hawaiian word: &#8220;manini&#8221; which means &#8220;tight&#8221; or  \t\t&#8220;ungenerous.&#8221;]<\/p>\n<p>Today&#8217;s Chinatown, bounded by  \t\tAlakea, Vineyard, River, and Nimitz, had always been a sparsely  \t\tpopulated marshy area.  The solid land around the Iolani Palace and  \t\tKawaihao Church was dominated by the government and by commerce, leaving  \t\tthe less desirable area west of Nu`uanu affordable to immigrants.  You  \t\tcan see a nice pair of <strong>stone<\/strong> <strong>lions<\/strong> at Bethel and Hotel  \t\tStreets guarding the old boundary.  They are a gift from our sister city  \t\tZhongshan China, whose officials are expected to be here for the  \t\tdedication of a new statue of <strong>Sun<\/strong> <strong>Yat<\/strong> <strong>Sen<\/strong> (portraying his Honolulu schoolboy days) now being cast for us in  \t\tChina.<\/p>\n<p>Malaysian, Vietnamese, and Filipino  \t\trestaurants have sprung up in recent years, as the area is constantly  \t\trefreshed by today&#8217;s immigrants.  But why &#8220;Soul De Cuba?&#8221; someone  \t\tasked.  That&#8217;s because early Chinese immigrants to Cuba played an  \t\timportant part in the war against colonial Spain, and added their  \t\tfood-wisdom to the African and Creole culinary traditions that gave  \t\tbirth to Cuba&#8217;s food heritage.  Who knew?!<\/p>\n<p>Space does not permit me to rhapsodize  \t\there over all the wonderful little restaurants and food stalls &#8211; you  \t\treally owe yourself a Chinatown adventure of your own, but I would be  \t\tremiss if I didn&#8217;t point out one of my personal favorites: <strong>Duc&#8217;s  \t\tBistro<\/strong> on Maunakea (Chinatown&#8217;s &#8220;Main Street&#8221;).  This wonderful  \t\tlittle enclave is a welcoming and civilized place for excellent  \t\tFrench-influenced cuisine, the best in atmosphere and live music, all  \t\thosted by the man himself, <strong>Duc<\/strong>.  I love to sit at the tastefully  \t\tlit bar and treat myself to a bowl of their signature lobster bisque.   \t\tIt&#8217;s easy to think that I&#8217;m in classy New York, or visiting Paris. Not  \t\t&#8220;cheap,&#8221; but well worth it. Check them out!<\/p>\n<p>Gorging myself at a Dim Sum  \t\tpalace on River Walk with our group, I decided to try chicken feet for  \t\tthe first time.  They were sort of like tiny, savory, Buffalo wings!   \t\t&#8220;Probably the loser.&#8221; Said one of the guys, alluding to the chicken  \t\tfights still held in our rural districts.  Yes, it was a day of  \t\tillumination and of firsts, but my favorite local treasure turned out to  \t\tbe <strong>Mr. Liu<\/strong> who has a small stand in the lobby of a building on  \t\tthe makai side of King Street&#8217;s first (second) block.<\/p>\n<p>Mr. Liu is a true artist, trained in the  \t\ttraditional arts as a boy in China. One can purchase custom calligraphy,  \t\tlovely paper-cut art, or even have a genuine Chinese seal (&#8220;chop&#8221;)  \t\tcarved to use on your important documents or artworks.  But the really  \t\tinteresting thing about Mr. Liu is how he raised his three children in  \t\tthis new land, and put them all through prestigious colleges where they  \t\texcelled in professional programs.  You see, this talented artist spent  \t\tyears earning his living in Chinatown by cutting meat as a butcher!  I  \t\twas glad to see that, yes, he still has all his skillful fingers and  \t\tdisplays the soul of a true artist.  Be sure to stop by for some  \t\taffordable and elegant art when you explore the world&#8217;s best Chinatown  \t\tfor yourself.  .  .
