It is a myth that taste and health and never obtained together in a single dish. Here is a dish from the Indian heartland that serves as a good snack or a breakfast. The generic name for such dishes is bread cutlet.

Though historically a cutlet consisted of meat, the vegetarian varieties have become immensely popular. The filling consists of either potato or sweet potato with a host of other ingredients. This dish has become internationally famous as an appetizer.

Complexity level

This process is moderately easy.

Time taken

The entire process of cooking this dish will take about 30 minutes from start to finish.

Ingredients

You would need about 6-8 slices of bread.

The following are necessary for the topping:

Steamed and grated sweet potatoes – 250 g

Spinach (finely chopped) – 30 g

Spring onion leaves (finely chopped) – 30 g

Fenugreek leaves ( fresh and finely chopped) – 30g

Coriander ( fresh and finely chopped) – 30 g

Ginger (grated) – 1 inch stick

Green chillies (crushed) – 3-4 depending on taste need

Lemon juice – 1/2 -1 teaspoon as per taste

Sugar – 1 teaspoon

Garam masala – 1/2 spoon

Salt

Sesame seeds

Green Coriander Chutney

Olive Oil (or any cooking oil)

Process

Take a bowl that fits all the ingredients that have been listed for making the topping. Mix them all well in the bowl.

Cover the bowl and place the bowl in the refrigerator in order to ensure that the individual taste of each ingredient is retained.

After about 15 minutes of refrigeration, take out the bowl.

Make small, marble-sized balls from the mixture in the bowl. This is to ensure uniform quantities of the mix.

Apply the green chutney on the bread cube. Press the marble-sized balls over the cubes. Apply by quick strokes of a spoon.

Coat the top layer with sesame seeds.

Do the same with all the bread cubes.

Take a flat hot pan and sprinkle olive oil or any other oil of your choice. Put it on a medium sized flame.

Place the bread cubes on the pan and roast on either side till it becomes golden brown.

Serve hot along with ketchup. You could also serve some hot beverage to go along.

Tips

You could make use of any other vegetables of your choice rather than the greens and roots used here.

After you apply the chutney, quickly add the topping and roast else the bread will turn soggy.

You could add extra richness to the dish by making use of dry fruit slivers instead of the sesame seeds for topping.

You could also avoid sesame seeds and sprinkle cheese on the bread and either grill or bake it.

You could decorate the surface of the bread with coriander to give a good look.

Sweet potato, sesame titbitsCooking tasty recipes can be done in a very healthy manner.
