Blend the tomatoes, bread, lemon juice, garlic, salt and 2 tbsp olive oil with the help of a stick blender. Take a small bowl and pour the blended mixture in it through a sieve. Use a ladle to press it and squeeze out the liquid in the bowl, discard the pulp. Refrigerate it for an hour or so. Combine parsley, lemon zest and almonds thoroughly in a bowl.
